Shiraz

Hunter Valley, NSW. Bright colour,very concentrated,with toasty oak, redcurrant fruit and a touch of leather on the bouquet; a firm and quite dry palate, with a savoury quality to the finish.

Adelaide Hills, South Australia. This Syrah was picked from a vineyard in Forreston in the Adelaide Hills. It was picked early to create a light style. Around 40% whole bunches were included in the ferment to give added spice and lightness. The cap was gently pumped over twice daily for the duration of the wild ferment. After an extended ferment the pomace was pressed to seasoned large format french barrels. After 9 months the wine was racked, and sent directly to bottle without fining or filtration...

Adelaide Hills, South Australia. This cool-climate Shiraz is elegant yet plush with oodles of fresh, poached plums, crushed blackcurrants and gentle spice. The palate is smooth and full with juicy red berries, gentle herbs and spice, and all well supported by excellent structure, a juicy acidity with a long, gentle finish. Perfectly matched to rare sirloin steak or a crispy pan-grilled lamb cutlet. Age till 2030...

Limestone Coast and Langehorne Creek, South Australia. Tasting notes: Vibrant purple hues with a deep ruby red core. The nose has masses of black fruits, red currants and spice which support hints of espresso and dried spice notes. On the palate, the wine is soft yet maintains expressions of cassis, anise and earthiness. Savoury, rich and yet balanced and restrained...

Yarra Valley, Victoria. After fermentation is complete, the skins are pressed off and the juice settled in tank for 48 hours. The juice is then "racked” off to French Oak barrels (45% New, 55% Old) for full malolactic fermentation which takes approximately 4 months. After malolactic fermentation is complete the wine is "racked” to tank, the barrels are cleaned, and the wine is returned to the same barrels for final barrel maturation...
