Billy Button
Jo Marsh is not a box ticker. She embraces every task with great expectation and seeks out the path less travelled. With a focus on alternate varietals, Jo produces an astounding array of wines, which, including cellar door only wines, comprises over 20 different varietals, some in miniscule quantities. Working closely with local growers, Jo has helped to breathe new life into this tiny wine region, and shine a light on the breadth and depth of the grape varietal variation that we have in Australia. Jo follows no rule book, she believes in doing what’s best for the wine, polishing and perfecting, highlighting the fruit and sculpting the palate so the wine flows through the mouth with texture and interest.
Pinot Gris (Grigio) grapes are actually pinkish grey in colour, from which they derive their name. Gris means grey in French and Grigio grey in Italian. Wines made from this variety can range in style from light and zesty to rich and full bodied. The Billy Button Pinot Gris positions itself somewhere in the middle of these styles and is a culmination of the two, offering fetching aromatics and crisp acid, paired with an intense textured palate. The coolness of the Alpine Valleys lends itself to good acid retention and you could say this wine has the aromatic style of a Grigio and the textural qualities of a Gris on the palate.
Production Notes
After careful pressing and minimal settling the wines were fermented with selected yeast strains to capture varietal character and enhance mouthfeel. The wine was matured on yeast lees post fermentation until clarification just before bottling in June 2021.
Tasting Notes
Pale straw, with a light green hue this wine has lovely lifted aromas of nashi pear complemented by flinty minerality. The palate displays the same nashi flavours, highlighted with lemon curd. Lovely balance, with appealing acidity and light textural mouthfeel.
