Between Five Bells
A collaboration between David Fesq, the sixth generation of a wine family with their origins as Nègociants in Bordeaux and Ray Nadeson, avant-guard winemaker and founder of Lethbridge Wines. The ultimate ideology of B5B is; wines that speak of neither place nor varietal, but rather, unique wines of Australian origins that are simply delicious to drink.
2021 White
The base of the 2021 B5B White is Vermentino; we split this into two parts and fermented separately. The first part was destemmed, gently pressed and fermented in foudre, the second was fermented on skins for 10-18 days. While the wine was naturally fermenting in the foudre we introduced Pinot Gris, Riesling, Chardonnay & Pinot Noir juice at different stages as a way of increasing texture and complexity while maintaining fruit vibrancy.
