Estate Cabernet Sauvignon 2021

A classic Yarra Valley Cabernet that is both elegant and strong. This wine offers a generous and satisfying balance between fruit and spice and really evolves, encouraging you to sip and smell. Its loaded with notes of blackberry, cedar and spice. A good wine to share with others of savour in your own company.
Tasting Notes
A beautiful classic Yarra Valley cabernet of elegance. The fruit profile is loaded with blackcurrant, cedar and spice, the tannin is fine, yet present along the length of the palate. A generous and satisfying balance between fruit and spice is evident in both the perfume of this wine and the taste.
As this cabernet opens up further the detail evolves into a wine which sits into the palate and rewards the drinker with chocolate and cedar like tannins, with great integration of both fruit and oak textural influence on the structure. Firm yet with some plush and fine grain give. The textural elements sit into the fruit profile on the palate which is reflected on the nose of summer berries, spices of Christmas and small notes of cardamom, cassia bark and black pepper. It is both elegant and strong, well balanced with natural acidity and fruit weight.
Process
Harvested on the 31st March 2020 and crushed to fermenter. Ferments were pumped over daily or plunged. Primary fermentation was completed after 12 days. Pressed after 23 and filled to oak with a portion being 30% new french oak barrels.
