From dry grown bush vines at the upper & northern sub regions of McLaren Vale.
85% Smart Vineyard, Clarendon, 15% Springs Hill Vineyard, Blewitt Springs
Nose: Crunchy red fruit, cranberry, nettle and raspberry tunes
Palate: Balanced textural palate moving through from a bright crunchy front palate to those ethereal notes resulting from extended maceration.
We love the energy and balance that comes from the Springs Hill vineyard in Blewitt Springs, the berries build delicious flavour and cocoa powder tannin, whilst retaining their natural acid. Spot on for minimal intervention winemaking. Clarendon has a slightly heavier soil profile bringing juicier, more fruitful characters to both the nose and palate.
In the winery we kept the vineyard parcels separate and let them both have a cool soak as whole berries before an open ferment. The heat spike in V19 brought the berry flavour through but not necessarily ripened the stems so we elected to use destemmed whole berries without any whole bunch component. Gentle aerations or punch downs twice a day enabled us to capture energy, flavour & balance.
