With our ongoing commitment to protect the environment, through implementing sustainable practices in all our vineyards, it was a logical progression to move to the next step and investigate the benefits of an organic approach to viticulture. Our Headwaters Vineyard is farmed in compliance with organic standards.

Babich Grüner Veltliner is a versatile wine that would pairs well with a variety of dishes, from fish to chicken to ham.

Production Notes
Our Grüner Veltliner was crushed, then left on skins for a period of 6 hrs to extract spicy flavour and build weight. It was then pressed into stainless steel tanks and fermented with wild yeast at relatively warm temperatures. After eight months on lees the wine was bottled without fining.

Tasting Notes
Spicy green musk aromas with pear, white pepper, bees wax and jasmine. A voluminous and well structured wine with mineral, lemon grass and a lingering floral perfume. Complex, textural and spicy.
