Douloufakis, Heraklion, Crete, Greece

Located in the centre of Crete, the Douloufakis winery now looked after by third generation Nikos and who has put this estate on the world map. The privately owned vineyards are situated on hill slopes at an altitude of 350 meters and the cultivation is done by hands as well as by mechanical means. They cover 20 hectares and are located within the vine region of Dafnes, on the island of Crete, in Greece.

"Dáfnios”, from the name of our village, Dafnes.

 
An excellent wine made with 100% Vidiano grape; a very old Cretan grape variety which has been ignored for many years, but due to the arduous and persistent efforts of some inspired winemakers of Crete has come back to the foreground and has given high quality wines in recent years. White "Dafnios" is produced with no barrel usage.

 
From the area of Dafnes, near Heraklion (Crete), at 350 metres above sea level.

Vinification
Classic white vinification with fermentation in stainless steel tanks, at a temperature of 18°C. There is no barrel usage in either fermentation or maturation.

Alcohol : 13,12% vol
Residual sugar: 1,3 gr/lt
Total acidity: 6 gr/lt
Total Sulfur: 90 mg/lt

Ageing
 
It can be aged up to 5 years. It develops a surprisingly different character over time. Fresh fruity aromas morph into toasty nuts, honey, caramel.

Tasting Notes
 
Pale golden colour. Medium intensity aromas of yellow and citrus fruits, which are combined with a little more intense aromas of chamomile, jasmine and spices. Full and rich flavour presenting the tasting characteristics of apricot and flowers. Very pleasant, balanced acidity and fine finish.

Serving
 
Should be served at a temperature of 9-10°C; it would be a fine accompaniment to some fish, like sole "meunière", John Dory, grilled mackerel and weakfish. It would also accompany pork with celery, the traditional Cretan pork with leeks, lamb "fricassée" with lettuce. It would also make an ideal companion to chicpeas soup with lemon sauce or salad of boiled chickpeas with herbs.
