ATMA White is a blend of 70% Xinomavro and 30% Malagouzia. The Xinomavro is from Apostolos’ own biodynamic vineyards and represent the juice from the youngest vines that have recently been planted. The Malagouzia is from the Fytia Village of Naoussa, where the altitude ranges from 500-600m above sea level. Each variety is harvested separately. For the Xinomavro, the grapes are de-stemmed and only the free run juice is then placed into stainless steel tanks with organic yeast for fermentation. The Malagouzia is also destemmed but is left for 10 hours with its skins in order to extract flavor and other characteristics before being placed in stainless steel tanks with organic yeast for fermentation to begin. Fermentation for both grapes takes place at about 16-17C. Once completed, the wine does not go through malo-lactic fermentation as the intent of the wine is to retain Xinomavro’s high acidity. The wines are then filtered and stabilized at -3C. The wines are then blended and left in tank to settle for approximately two months before bottling. ATMA White is unique as it is one of very few blanc de noir Xinomavro wines produced in Greece. The wine has lovely floral notes of Malagouzia but also "something different” as a result of the Xinomavro. The wine is medium bodied with medium to high acidity and a lingering finish.
