The Sakura (translates to ‘Cherry Blossom’) is a blend of 69% organic / biodynamic sangiovese and 31% bush vine grenache, all hand-picked and whole bunch pressed to a variety of tank and aged French oak. The tank portions are kept super cool and crisp, capturing the cherries and strawberry notes. Whilst the barrels are left on their ferment lees for 3 months, building texture and complexity across the palate.
On the nose there are aromas of watermelon, guava and strawberry bush.
The palate is a mouthful of watermelon, subtle strawberry and honeydew interplayed with white spice, garden herbs and teasing lees texture through a to long super dry palate. This is outstanding!
