The D’Aloisio Vineyard is located in the Seville township; it has a north facing slop on red volcanic soils with an altitude of 230 metres above sea level. Clone is also I10V1.
The fruit is hand-picked to insure only clean, healthy bunches are selected. We then whole bunch press, and settle the juice overnight in tank. This is followed by a light racking directly to barrel (approx. 95% solids), where natural fermentation takes place. MLF is not encouraged and wines are sulphured directly after primary. The wines are then matured for 10 months in 30% new (225 – 500L) French oak barrels.
