Domenica winery sits 460m above sea level atop the granite ridge sweeping away to the south west of Beechworth. The wines are vividly reflective of their origin, a gripping mineral texture encasing the mature vine vitality of the varietals chosen to express it.
Winemaking is traditional. Taste is more important than numbers. The yeasts comes from the site, not a packet. Pressings, solids and lees all play their part completing the picture. The wines are carefully maintained in oak bariques before being bottled unfiltered.
Wines are traditionally made; owner/winemaker Peter Graham has an impressive 13 years under his belt as assistant winemaker at Giaconda. Unsurprisingly, the Two Cells wines are first class examples of small production, ‘hands on’ winemaking at its very best.
Appearance
Light gold.
Aroma
The fruit aromatics are driven by lemon and nectarine, with secondary characters typical of Beechworth – oatmeal, hazelnut and a touch of struck match.
Palate
The influence of new oak is subtle, with traces of ginger and allspice. The palate is clean and focused, yet displays the richness and length of old vines in granitic soils. The acid profile is pronounced, and well balanced to the depth of the wine. Subtle texture is imparted by the restrained use of both new oak and malolactic fermentation.
