Dalfarras

Dalfarras Wine is a celebration of wine, art and family. A creative union between partners in crime Alister and Rosa Purbrick and their eldest child, Hayley Purbrick. Rosa Purbrick is the artist and the wines are named in homage to her maiden name Dal Farra. She is a creative soul who brings her passion for the natural landscape into her works and a vibrant energy to the Dalfarras labels. Alister Purbrick is the 4th generation of the Purbrick family at Tahbilk and adds his wine-making touch to the Italian and Spanish inspired wines. Their daughter Hayley, who is passionate about the environment is making sure the wines are modern yet environmentally friendly carbon neutral wines. 

VITICULTURE / WINEMAKING

This wine was crafted from 100% Prosecco fruit, sourced from vineyards in the Goulburn Valley. Grapes were picked and crushed during the cool of night to retain their fresh, varietal flavours. The juice was then divided into select parcels. Each parcel underwent a different treatment such as malolactic fermentation; fermentation and time with French oak; or spending an extended period on yeast lees. Each treatment resulted in an individually flavoured parcel of wine, and the unique character and personality of the final blend is a result of the special handling of these separate parcels.

HARVEST NOTES
The growing season could well be described as dry and warm, and almost perfect for growing premium wine grapes. The winter started with a very dry June and below average rains in July and August. Spring continued the theme with less than half the average long term rainfall, and finished with an unseasonably warm November. Although it remained warm, ripening didn’t advance too much faster than harvesting, so the whites have clear varietal definition and crisp fruit flavours, and the reds are bright and varietal, with concentration and depth. It seems that the cooler nights kept a lid on sugar accumulation so that ripening progression was close to perfect, something we usually only see in cooler seasons. At this early stage 2018 promises to be a very good year.
