Vinification
Made using the French saignée method (to bleed). Pinot Noir juice spent a very short time on skins to achieve minimal phenolic and colour extraction, and obtain its beautiful pale colour. The juice was then treated to a slow, cool ferment in stainless steel. Minimal intervention to achieve the most natural expression of the wine.
Maturation
Stainless steel.
Appearance
Pale salmon with a hint of pink.
Aroma
Summer drinking. Fragrant wild strawberry with a whiff of toffee apple.
Palate
Light and refreshing. Lots of juicy berries and a hint of fresh watermelon. Dry, textural and very, very moreish.
Food Matching
Summer days with friends, a picnic blanket and a croquet set. Delicious downed with platters of antipasto, bowls of fresh prawns or a huge pan of paella.
