Harvest of the fruit commenced in late March. The fruit was crushed to small stainless steel fermenters over a three week period. The juice was drained and returned to the tank daily to assist in extracting colour and flavour.
Maturation
The wine was matured for 12 months in old French barriques. Minimal fining and filtration was engaged in the production of this wine.
Appearance
On release the wine has a deep red colour with purple hue.
Aroma
The wine has aromas of red berries and plums, cracked pepper and subtle spiciness.
Palate
The palate shows intense cherry flavour, with dark chocolate and subtle vanilla oak characters. The palate is elegant with firm long tannins and long persistence oif flavour.
