Domaine Heresztyn-Mazzini
Following a decade working on the family vineyard Florence Heresztyn with her husband Simon Mazzini (from Champagne) decided to create their own Domaine, which today covers 5.5 hectares spread across the villages of Gevrey-Chambertin, Morey-Saint-Denis, and Chambolle-Musigny.
At Domaine Heresztyn-Mazzini, every action is deliberate and thoroughly researched, from the vine to the cellar. Florence and Simon respect the environment and use environmentally friendly pest control, and spend a lot of time out amongst the vines, carefully monitoring their growth.
With the experience of six winemaking seasons behind them, they have chosen whole bunch fermentation to give both structure and texture to the wines, which are matured for 12-16 months in barrels from carefully selected coopers. The wine is bottled on the estate, according to the lunar calendar. Florence and Simon are focused on achieving the best from their vineyards in the Cote de Nuits, the elegance of Chambolle-Musigny, the depth of Gevrey-Chambertin, and the complexity of Clos-Saint-Denis.
Tasting Notes
Vinification
This wine is made using 35% whole bunches. The fermentation process begins using the naturally present yeast, following a pre-fermentation cold maceration process. Frequent pigeage, 3-4 times per day, to obtain maximum extraction.
Maturation
In oak barrels (30% new wood) for 16-18 months.
Palate
An excellent, refined wine made using old vines. Complex and highly elegant on the palate. Notes of red fruits and spices. A structured wine with a robust aspect.
