L.A.S. Vino, Margaret River, Western Australia
The aim is to make absolutely delicious, delectable and desirable wines and to discover new flavours in the world of wine. Our mantra is minimal intervention and where possible we aim to work with growers using sustainable vineyard methods. There are approximately 200 dozen of each wine made. We hope you enjoy the wines as much as we enjoyed making them.
CBDB (Chenin Blanc Dynamic Blend). Most of the wine is Chenin Blanc. But for good measure we have co-fermented a bit of Viognier (4%) with natural yeasts from the skins of the berries.
The wine was split into thirds; with a third barrel fermented in old oak, a third put into granite like vessels and a third undergoing malolactic fermentation. The wine was left for 10 months in these vessels to mature with a little bit of stirring. Nothing except a touch of sulphur (for stability) and a little clay (for clarity) was added prior to bottling the wine unfiltered.
Tasting Notes
The CBDB is clear pale straw in colour. It has an array of complex aromas including fresh pear, honeysuckle with a hint of citrus, honey, almond and melon. It is full bodied and almost creamy on the palate with hints of lemon, lime, honey and ginger bread. The finish lingers and it almost feels as though you have just eaten a toffee apple sprinkled with cinnamon.
