Out of Step
Based in the Yarra Valley & established in 2012, Out of Step Wine Co is what happens when two former music junkies decide to get serious about indulging an ever-growing parallel obsession with fermented grape juice.
Their approach is simple, although the wines themselves are anything but.
Making small batches from single sites selected for their ability to yield grapes of outstanding quality, & eschewing a lot of conventional techniques that seem to make for rather pedestrian booze, they believe it is of critical importance that what they produce genuinely communicates the variety, vineyard, season and combination thereof, as well as being fucking delicious.
They know there is no other choice but to embrace the ethos that wine, like a lot of the wonderful things in life, should move you. To be great it must be real, expressive & honest.
So why Out of Step? Well, in this day & age who the hell would want to be in step?
Out of Step Lusatia Park 'Margin Walker' Sauvignon Blanc 2016
This is not a wine about variety. This is a wine about a place…..and a winemaking ethos. Only 264 bottles were produced from a very special patch of fruit on the Lusatia Park vineyard in the upper Yarra Valley. Wine from the fringe…..the Margin Walker.
There’s no disputing the quality of the fruit that is grown on the Lusatia Park Vineyard just outside the township of Woori Yallock in the Yarra. Deep, red volcanic, free draining soils coupled with vine age, limited yields & a north facing slope approximately 200m above sea level combine to produce grapes of outstanding concentration.
And in 2015 we had a growing season as close to perfect as they come. Long steady ripening ensured slow & even development, complex flavours & balance.
Limited to just 264 bottles, the wine was made by whole bunch pressing to a French oak barrique, wild fermented & left on lees in its barrel for around 5 months. Then racked, but not fined or filtered, & bottled in August 2015.
