"We have long loved the more crystalline expression of Clare riesling, and therefore sourced fruit which we had handpicked from the Faulkner and Sandow family vineyards. 80% of the blend is from Faulkner which is situated in the high Eastern Hills in Penwortham at about 480 meters above sea level, and Sandow is situated on the Mintaro to Leasingham rd. A very aggressive press cut was made to retain only the most delicate free run juice, resulting in less than 430 litres per tonne. Ferments were inoculated, and kept cool to preserve freshness. Cold stabilised, then bottled, very classic old school winemaking with the aim of making a bone dry, slatey, and fine style."
