Vinification
Two Cabernet components from our Carbunup River and Cellar Door (Yallingup) vineyards were destemmed and crushed to separate static tanks and inoculated immediately with a Bordeaux yeast strain. Each tank was pumped over twice daily using a Turbopigeur - a red fermentation pump designed in France that floods the cap with a very gentle pumping action. The wines were fermented on skins to dryness at a maximum of 28°C and pressed after 14 days.
Maturation
The wine was racked to barrel for MLF and was then matured for 10 months in 10% new French oak barriques.
Appearance
Medium dark red colour with purple tones.
Aroma
Dark blackcurrant and touches of leaf and cedar are complemented by hints of chocolate and dried herbs.
Palate
Ripe cherry, blueberry and dark plum characters, soft balanced tannins and a creamy vanilla finish.
