Vinification
Three Cabernet and two Merlot components from our Carbunup River, Summus (Wilyabrup)and Cellar Door (Yallingup) vineyards were destemmed and crushed to separate static tanks and inoculated immediately with a Bordeaux yeast strain. Each tank was pumped over twice daily using a Turbopigeur - a red fermentation pump designed in France that floods the cap with a very gentle pumping action. The wines were fermented on skins to dryness at a maximum of 28°C and pressed after 14 days.
Maturation
The wine was racked to barrel for MLF and was then matured for 10 months in 10% new French oak barriques.
Appearance
Medium dark red colour with purple tones.
Aroma
Lifted dark berry and spice aromas, showing hints of chocolate and dried herbs.
Palate
A supple palate with cherry and dark plum characters, finishing gently with very soft tannins and creamy vanilla nuances. A flavoursome red blend with instant drinking appeal.
