Aroma: A complex and beguiling aroma of lime, gentle spice and nuts.
Palate: White pear and citrus fruits with touches of fine grained oak and butterscotch. Mid-palate creamy texture seamlessly leads to a clean tight citrus finish in this thoroughly modern style of Chardonnay.
Comments: Bright natural acidity and pure delicate fruit flavours are enhanced by subtle use of malolactic fermentation and quality French oak. A fabulous and versatile wine.
Viticulture: Grown on a north-facing bank of the Derwent River this 21 year-old cool-climate-vineyard is widely recognised for producing some of the best chardonnay fruit in Australia, much sought after by interstate companies. The soils are permeable loams over limestone imparting intensity and aromatic delicacy to the fruit.
Winemaking: Picked at flavour ripeness, the grapes were whole bunch pressed with only the free-run juice retained. It went straight to 100% French oak for barrel fermentation involving two yeast strains and 50% wild fermentation. This wine had 100% malolactic fermentation and all barrels received battonage fortnightly during the nine months in barrel.
