This family owned and operated estate, crafts a distinguished line-up of wines from each finely-tuned piece of the vineyard, tended to by Viticulturist Dino Cotsaris. Tasting Notes
Grown on our estate’s south-western slopes, this wine shows all the hallmarks of fine, cool-climate Adelaide Hills Sauvignon Blanc. This Sauvignon Blanc displays aromas of passionfruit, asparagus, honeysuckle, and lemon. The palate displays refreshing, green bean, tomato leaf and nettle characters and finishes with incredible mouth-watering acidity.
Winemaking Notes
Whippet Sauvignon Blanc is sourced entirely from Longview Vineyard in Macclesfield, Adelaide Hills. The fruit was hand-picked in early am, chilled to 10°C, the juice separated and skins pressed. Bentonite fining ensures a bright finish.
