Marlborough, New Zealand. There are your mono dimensional savvy’s that are a dime a dozen and have given the variety a bad name and then there are savvy’s like the Catalina Sounds of White that are simply stunning wines. This sauvignon blanc was handpicked and whole bunch pressed, the juice was minimally settled before running to various French oak formats for warm fermentation using cultured yeast. Post fermentation, the wine was aggressively stirred twice weekly. 100% matured for a minimun of 4 months on full yeast lees. This wine strikes a marvellous balance between textural interest and fruit purity with sweet oak interwoven with stonefruits on entry, giving way to focused grapefruit and lemon flavours building to a sustained, gently minerality and super long dry finish.
