Eden Valley, South Australia. The wine has a mild salmon pink colour which will develop further with time. It shows delicate aromatics of jasmine blossom and ripe melon with a dry palate that has abundant textural flavours of ripe apples and pear. The distinct citrus backbone will ensure the wine rewards aging for at least 5 years.
From a warm and very dry vintage, hand harvesting occurred much earlier than usual in the Eden Valley on the 28th of March. Supplementary irrigation was essential to sustain the vines through the heatwaves and very long dry periods over spring and summer. The hand pruned vines have ~ 55,000 buds/ha from traditional 5ft by 12ft plantings and yielded 10t/ha.
Harvest/Vinification
The selected bunches were crushed and then gently pressed to ensure that only minimal colour was extracted from the pink/grey coloured skins. Fermentation occurred in 5 year old French barriques using our own natural cultured yeast with the occasional stirring of its lees over a three month period.
