Heathcote, Victoria. This wine comes from a selected parcel of 15 tons of premium Shiraz from the Gentle Annie vineyard near Dookie, in the wine growing region of Central Victoria.
After harvesting the grapes were crushed and cold-soaked for three days prior to fermentation.
This give maximum expression to the flavour of the juice. We kept the juice in contact with the skins just long enough to ensure the natural shiraz fruit characters were strongly evident.
After fermentation the wine was matured in French and American oak barriques for 18 months prior to bottling.
The end result is a wine with glowing red colour, aromas of spice and a touch of vanillin oak above a core of savoury pepper.
The wine can be drunk now but will improve with up to 5 years aging.
