Clover Hill Vineyard is in Tasmania’s Pipers River, an area becoming acknowledged as the premier source of sparkling wine in Australia. It is ideally suited for growing the "holy trinity” of sparkling varietals; chardonnay, pinot noir and pinot meunier. The 66-hectare property overlooking Bass Strait has a similar climate to the Champagne region of France, with mild autumn temperatures with maximums in the low 20°C and minimums around 10ºC. The climate creates a long ripening period, which allows the fruit to accumulate intense flavour balanced with fine acidity. Vines are close-spaced and planted in deep, red volcanic soil in a frost-free amphitheatre, orientated north/south to maximise sunlight exposure.
Clover Hill sparkling wine is sourced from pre-eminent vineyards in Tasmania, an area becoming acknowledged as the premier location for cool -climate sparkling wine in Australia. Made from 100% chardonnay, Clover Hill’s first vintage was in 1991. Since 1994, the blend has evolved to include all three classic sparkling grapes, with pinot noir and pinot meunier added to the mix. The vintage in Tasmania was warm and mild, producing exceptionally high-quality wines. All the grapes were gently whole-bunch-pressed, fermented in separate batches and underwent partial malolactic fermentation and batonnage in tank. Clover Hill is crafted according to traditional methods. It is matured on lees in its bottle for a minimum 3 years. It contains components of selected reserve wines aged in French oak foudres and barrels to ensure the unique personality that is the Clover Hill house style.
The Clover Hill Brut Rosé is sourced entirely from the Clover Hill vineyard in the Pipers River region of north-east Tasmania; an area becoming acknowledged as the premier location for cool-climate sparkling wine in Australia. A limited release, Clover Hill Brut Rosé is crafted via controlled maceration of pinot noir grapes to extract a soft, pink colour and reveal a highly expressive bouquet of rose petal and red strawberries. A small amount of Pinot Meunier was blended in prior to bottling to add fragrance and mid- palate weight. Clover Hill Brut Rosé is crafted according to traditional methods. Fermented in its bottle, this wine is aged on yeast lees for at least 3 years, ensuring the complexity and intensity that is the hallmark of Clover Hill.
WINEMAKER COMMENTS
An attractive salmon pink colour, this exquisite sparkling wine has fine persistent bead and a gentle foaming mousse. Precise and crisp, it reveals layers of lifted redcurrant, ripe strawberry, spice and rose petal characteristics. An elegant sparkling wine with an extraordinary depth of flavours and superb length. This wine is an excellent aperitif, but will also work well with light meat dishes such as pate, smoked fish and veal.
