Chardonnay
Tasting Notes
A verve expression of our cool climate Chardonnay from the south of Margaret River. Chardonnay is harvested at moderate ripeness to retain freshness and natural balance. Fermentation in seasoned French oak adds complexity and generosity of texture without compromising the purity of the aromatics. The embodiment of spring. Perfume, texture, delicacy. Approachable and rewarding.
Food Matching
Caesar salad | veal | fish | fresh air
Maturation
The wine was matured in oak on lees for two months before winter bottling to capture the verve.
Winemaking
The wine began as a cool ferment in stainless steel for retention of lifted aromas and perfumes. Halfway through the ferment the wine was transferred to seasoned and used French oak for barrels to complete fermentation and to allow a gentle ingress of oak characters while preserving freshness and purity.
A great example of a maritime climate with an extended Indian Summer. A bountiful wet winter filling the dams, with a warm and dry spring and summer, allowing lovely balance of natural acidities and physiological ripeness in the fruit.
