Our sustainable collection of wines are pure and intense with plenty of character, just like the Babydoll sheep we named them after. These tiny sheep keep our vineyards tidy year round because they’re too small to reach the grapes. Using one of nature’s mowers means our wines are better for the environment and taste better too. Winemaking
The low yielding vines were harvested at optimal ripeness, with each clone being made separately. The parcels were cold macerated at 6 – 8 degrees for around five days before being warmed and inoculated with selected yeasts. A fast, hot fermentation proceeded with regular hand plunging which has helped to craft a wine with elegance and balance. The parcels were gently pressed off after fermentation, with a portion spending some time in second year French oak barrels while undergoing malolactic fermentation. The parcels then underwent a light fining, prior to blending, filtering and bottling.
Winemaker Tasting Notes
Visually the wine is bright with a youthful hue. The nose is brimming with lifted red fruits and a touch of savoury spice. The palate is supple yet juicy with dark cherry flavours, fresh acidity and a soft tannin finish. This is matched well with duck, lamb, venison and veal dishes
