Pimpernel Vineyards is a family business, and the realisation of a long held dream to develop an iconic Yarra Valley vineyard, capable of producing outstanding individual wines.
Their philosophy is simple – marry a great site with the best varieties and clones. Dry land cultivation techniques produce intensely flavoured wines which fully express the site and its climate. To ensure the best results viticulture is carried out by hand – cane pruning, shoot thinning, canopy management and selective harvesting allow Pimpernel to respond optimally to the nuances of each vintage.
In the cellar, winemaking interventions are minimized to maximise expression of the terroir. Fruit is received in individual parcels and fermented in barrriques or small open topped vats allowing close attention to the subtleties of each lot’s journey. As the wines mature in barrel their progress is followed with a similar level of attention to detail. Taking the classic estate approach Pimpernel wines are bottled, labelled and packed in the cellar by hand.
Tasting Notes
The wine is green-gold with brilliant clarity. The bouquet is intense with white peach, citrus and white flowers, hints of spice and biscuit. The palate has richly layered stone fruit with mineral and citrus blossom notes. The wine is seamless in the mouth with a clean acid finish and long persistence.
Cellaring: will remain fresh and increase in complexity for 3-5 years at least.
Food: classic chicken and veal dishes.
