Chain of Ponds
The Chain of Ponds winery was established in 1985 on the outskirts of Gumeracha, approximately 4km from the original township. While vineyards have been part of the makeup of the area since colonisation, the Chain of Ponds Winery was the first major planting of any note in the northern area of the Adelaide Hills Wine region.
Four thousand vines were initially planted, covering 9 varieties, consisting of 470 vines of each variety, which was further increased with an additional 150 acres planted in 1989. The first vintage being in 1988.
The winery has more recently extended the vineyard boundaries to source fruit from a much broader area of the region, which has added further complexities and subtleties to the wines themselves.
Chain of Ponds produces a wide range of products and varieties which are perfectly suited to this cool climate region.
The white varietals include Sauvignon Blanc, Pinot Grigio, Semillon and Chardonnay. The reds include popular Australian varieties: Shiraz and Cabernet Sauvignon, as well as emerging and exciting varieties for the region: Pinot Noir, Sangiovese, Barbera and Nebbiolo.
Novello
Chain of Ponds Novello is a winemaking style aimed at producing youthful vibrant fresh wines. This is our interpretation. Launched in 1995, these wines have been developed to be drunk young and are the perfect companion to food. Enjoy!

In the Vineyard
Sourced from a number of vineyards consistently producing high quality wines from a combination of the southern and central Adelaide Hills. Both areas provide unique fruit spectrums to the resultant blend.
In the Winery
Portions of high quality fruit were fermented separately in stainless steel using minimal cap management to limit over extraction and maintain the varietal fruit characters. Fermentation was finished in stainless steel prior to maturation in oak in order to preserve as much primary fruit as possible. Post fermentation the wine was matured for 10 months in 50% French oak and 50% stainless steel.
In the Glass
Colour Deep plum red with a plum hue Bouquet Lifted aromas of blackcurrant, blueberry and redcurrants, supported with aromas of chocolate and dried herbs with hints of tomato bush and subtle wild mint. Palate A varietal and good vintage example with excellent expression of primary fruits – blackcurrant, dark plums and hints of wild mint, tomato bush and dried sage. Well integrated oak gives a subtle savoury note on the finish and soft subtle velvety tannins and tight acid give good structure and balance. Medium bodied, with a long persistent flavoursome finish ensures early drinkability. This wine will suit any mildly flavoured red meat dish.
