Chain of Ponds

The Chain of Ponds winery was established in 1985 on the outskirts of Gumeracha, approximately 4km from the original township. While vineyards have been part of the makeup of the area since colonisation, the Chain of Ponds Winery was the first major planting of any note in the northern area of the Adelaide Hills Wine region.

Chain of Ponds produces a wide range of products and varieties which are perfectly suited to this cool climate region.

The white varietals include Sauvignon Blanc, Pinot Grigio, Semillon and Chardonnay. The reds include popular Australian varieties: Shiraz and Cabernet Sauvignon, as well as emerging and exciting varieties for the region: Pinot Noir, Sangiovese, Barbera and Nebbiolo.

Chain of Ponds Novello is a winemaking style aimed at producing youthful vibrant fresh wines. This is our interpretation. Launched in 1995, these wines have been developed to be drunk young and are the perfect companion to food. Enjoy!

In the Vineyard
Selected primarily from one vineyard of sangiovese in Charleston and two pinot noir vineyards, one in Kuitpo and the other in Gumeracha. The sangiovese vineyard ripened evenly and slowly to produce elegant fresh fruit characters with lively natural acidity while the pinot noir was added to complement the cherry and strawberry characters with hints of savouriness.

In the Winery
Crushed, destemmed and chilled to closed air bag press, the grapes were then cold soaked on skins for 24 hours to extract colour. The grapes were then pressed off skins, fined and settled for 48 hours. The resultant clear juice was racked and inoculated with a fruit enhancing yeast and fermented at cool temperatures to preserve the natural fresh fruit characters. The wine was aged on lees for 3 months to build texture and mouthfeel. Bottled before summer to preserve the fruit until it hits your glass.

In the Glass

Colour Vibrant pink with highlighted hues of purple, brilliant clarity. Bouquet Lifted aromas of strawberries and cream and rose petals with a hint of liquorice and fresh raspberries. Subtle nuances of candied raspberry with a hint of vanilla pod. Palate Lively fresh fruits of ripe strawberries and raspberries fill the palate with upfront fruit sweetness. Balanced acidity and a subtle savoury spicy finish balance with the gentle sweetness and the taste of lingering strawberries and cream. Persistent and intense in flavour – ideally suited for a spring or summer lazy afternoon.
