2021 Between Five Bells WHITE
The goal for this white was to share the delicious and intriguing qualities of the Red. To do this, we had committed to co-fermenting a number of white and red varieties.
Working with two local Geelong growers, we isolated small parcels of Riesling, Chardonnay, Pinot Gris and Pinot Meunier to be harvested within a few days of each other. Almost equal quantities of each arrived at the winery, where they were whole-bunch pressed into 1000L cuves for primary ferment. Extended solids-contact and 100% completion of malolactic fermentation round out the main winemaker influences.
The wine carries a beguiling combination of Chardonnay richness, with very high acid structure from the Riesling, Pinot Meunier and vintage characteristics, plus a subtle red-fruit nose, (thanks to the Pinot Gris and Meunier). It’s powerful, rich and extremely bright.
