Pemberton Western Australia. The Winemaking: Fruit for this wine received skin contact for 8-12 hours, until the appropriate flavour and texture was achieved. No preservative (So2) was added during harvest. A selection of yeasts was used during fermentation.
The Wine: Aromas of peach, pear and lime with pulpy citrus characters follow through onto the palate. The wine has a soft, generous texture and gentle acidity that carries the flavours along the palate providing length.
Drink With: Thai Chicken, Caramelised Pork Hock.
