Earlier picking, gentle whole bunch pressing with low extraction rates, using only free run juice, minimal
additions
and gravity feed directly to barrel for wild ferment with full solids, have all contributed to an elegant wine with a fine acid backbone, complexity, texture
and
well integrated oak.
Tasting Notes
Pale straw with green hues.
Nose
Aromas of gunflint, lemon curd, lemon peel and talc. This wine has
sulphide (struck match character) complexity with a fine citrus drive.
Palate
Flavours of lemon curd and grapefruit with searing length. A wine with clarity and finesse. A tightly focussed and very precise wine showing seamless fruit purity with the lightly toasted French oak very much in the background. Crystalline acidity and a mouth-watering finish complete the wine.
Cellaring
Should develop further complexity with 5-7 years careful cellaring.
