These Chablis vineyards, located primarily in the lush Valvan valley, are on average 25 years old. Wine produced from these 8 parcels, blended and matured in the true Chablis tradition, reveal all the facets of this rich ground.

· Terroir
The varying soil dates back to the Kimmeridgian period, with relatively deep clay loam, containing marl and oyster fossils. Quite rich in limestone.
· Grape
100% Chardonnay.
· Average age of the vine
25 years.
· Vinification
With no added yeast, long fermentation using natural yeast, in temperature-regulated tank. Spontaneous malolactic fermentation.
· Maturing
On fine lees, only in stainless steel tanks, with as little manipulation as possible, during 6 months minimum. Long stabulation at moderated low temperatures. Fining if necessary using bentonite. One light filtration is performed before bottling.
· Bottling
We do our bottling in the winery under airless conditions. Cork or screw cap (on request).
· Keep for 3 to 5 years
Tasting notes
Serve between 12 and 14˚c. The wine should be aired or carafed before tasting.
It will reveal notes of white fruit such as peach, with a mineral structure. In the mouth, a stony sensation complements this pure, rounded wine.
