Pyrenees, Victoria. The Victorian Pyrenees region is renowned for producing cabernet sauvignon displaying complexity, concentration and definitive regional character, . Produced from selected parcels of grapes sourced from our estate vineyard, the Blue Pyrenees Cabernet Sauvignon 2012 was fermented in both two-tonne
open fermenters and 15-tonne static fermenters. Subsequently, it was matured for 14 months in new, one and two-year-old French oak barriques.
Tasting Notes
Colour: Bright ruby red.
Aroma: Fragrant red berry fruit, regional mint and classy French oak aromas.
Flavour: A generous mouthful of ripe dark berries complemented by forest flavours of eucalypt, mint leaves, earth and cedary oak. Full bodied with classical Cabernet Sauvignon structure and abundant fine grain tannins, which contribute to an elegant, persistent finish characterised by lingering chocolate flavours.
Cellaring: Can be enjoyed now or cellared with confidence for 8 years
