Sauvignon Blanc has found a natural home in the high altitude and cool climate of the Adelaide Hills. Nepenthe has been producing Sauvignon Blanc since its inaugural vintage in 1997, throughout the ensuing years and vintages the Nepenthe Sauvignon Blanc has gained recognition as a benchmark within the industry.
Winemaking
Nepenthe Sauvignon Blanc is sourced from a range of selected vineyards in the Adelaide Hills. The fruit is harvested after midnight, taking advantage of the cool night air. Fruit is then rapidly transported to the winery and immediately crushed, chilled and pressed in a pneumatic press, then allowed to settle for 4 – 6 days. A majority of the wine is fermented in stainless steel tanks with a small proportion fermented in brand new oak barrels for 7 days. An intensive selection process is then undertaken to assemble the final wine.
