Mountadam
Established in 1972 as one of Australia's pioneer Chardonnay producers, Mountadam was founded by the late David Wynn, without question one of the most significant contributors to the Australian wine industry and an important part of the Mountadam story.

In selecting the land for the Mountadam vineyard, Wynn was the first to recognise the potential of a cool, elevated site to produce wines of great elegance and structure, and chose an area high above the Eden Valley, which he named High Eden. At 570 metres above sea level, Mountadam is still to this day one of Australia's most elevated vineyards. As of 2005, the vineyard has been owned by South Australian businessman David Brown, who has made significant investment in vineyard improvement and expansion.

Delicate floral and spicy characters of cool climate Shiraz complement the focused yet lingering red stone fruit aromas. The palate has a smooth velvety tannin structure with a compelling balance of firmness and tremendous fruit flavour. The wine shows extraordinary length of flavours with plums, cherries and black berries, woven around the characters imparted from quality oak barriques sourced from the central forests of France. The wine undoubtedly has serious aging potential.

Tasting Notes

Grapes/Blend: 100% Shiraz

Vinification

The Patriarch grapes were hand harvested on the 30th of March and manually graded across our sorting table before being gently crushed. Fermentation was undertaken using our own natural cultured yeast in unique submerged cap fermenters. The juice was run off daily into a large open tub and then recombined with the skins over 14 days, until fermentation was complete. The skins were then allowed to sit undisturbed in contact with the young wine for another 5 weeks.

Maturation

Malolactic fermentation occurred with our own cultured strain and the wine was aged in new French barriques for 2 years.

Appearance

Vibrant red colour with a subtle tinge of purple.

Aroma

Initial aromas are of delicate perfume and peppery spice typical of superior cool climate Shiraz aged in top quality French oak. 

Palate

The palate has a smooth velvety tannin structure, compelling firmness and tremendous depth of red fruit flavour, with dark plum, cherry and black berry characters predominant as a young wine.
