Winemaker Notes
Cabernet Sauvignon fruit was sourced from selected Coonawarra vineyards with each vineyard parcel being fermented and managed separately. The wines were fermented in static and rotary fermenters to achieve good colour and varietal fruit expression. At the completion of fermentation, each batch was drained and pressed before transferring to French oak barriques for 12 months maturation before being blended and bottled.
