Seville Estate
Situated on a ridge of red volcanic soil overlooking the upper YarraValley– hidden from the well-trodden tracks of the mainstream, the soils at Seville Estate are extremely fertile red to grey volcanic, over a clay base.
The vines are substantially dry grown, as irrigation is only used when the vines are under extreme stress.
Winemakers Comments
The vineyards of Seville Estate are located in the cooler, southern regions of the Yarra Valley. As a result, our Chardonnay style is crisper, tighter in structure with citrus fruit characters. This is 100% Estate grown Chardonnay.
Vinification
Fruit is handpicked and gently whole bunch pressed. Juice is settled overnight in tank then gravity fed to barrel. Fermentation occurs naturally in barrel. A range of French oak coopers and formats (300L – 2200lt) with 30% new are sourced to introduce oak complexity. Following primary fermentation, maturation continues on lees for 10 months. Malolactic fermentation is not encouraged. Wine is then racked, cold stabilized and filtered to bottle.
Tasting Notes
The wine is pale yellow with a clear hue. Beautifully complex and perfumed with melon fruits, sweet nutmeg spice, match stick flintiness and toasted almond oak characters. The palate is tight with apricot fruits, sweet spice, toasty oak and great acidity. The wine has nice phenolics (being a warmer year) which add texture and structure to the wine. A complex focused style that will age gracefully.
Food: Great with white meats and seafood or by itself.
