VINIFICATION
The fruit was crushed, destemmed and then pressed using a membrane press. Pressings were not used. fermented using French Yeast at 12-15 degrees Celsius. the ferment was kept slow and cool to retain all the natural flavours of the grape. the wine was then racked and filtered. The result is a wine that is a true expression of the grape and the terroir from which it was made.
COMMENTS
Our high altitude vineyards located in the Eden Valley provide ideal growing conditions for grapes such as Sauvignon Blanc. The result is trademark tropical Sauvignon Blanc fruit aromas. The palate is crisp and light with nicely weighted acidity and flavour. Approachable and fresh, with a crisp, clean finish. This wine can be enjoyed with a array of foods. Our winemaker recommends pan-fried fish with lemon butter.
