The Directors' Cut Shiraz is a deep ruby in colour, with splashes of violet. The nose displays beautifully articulated dark fruits, cherries and cassis with hints of spice box and anise. Seductively rich on the palate, flavours of dark chocolate and plums integrate with supple, focused tannin and and impressive length. European in style, with savoury characters, and wonderful mouth-feel.
Vinification:
The fruit for Directors' Cut Shiraz was harvested at night and then crushed to small open top stainless steel fermenters. After 24 hours of skin contact fermentation was commenced with a Rhone isolate yeast. Following 7-8 days of cool (18 degrees) fermentation on skins and hand plunging 3 times daily, the wine was transferred to oak hogsheads (80% French, 20% American) for natural malolactic fermentation. The wine was then topped and left on lees for 6 months with "battonage" (lees stirring) once a week. The barrels were racked and refilled before a further 8 months maturation prior to bottling.
