Tahbilk
Established in 1860 Tahbilk is one of Australia’s most beautiful & historic wineries. Located in the Nagambie Lakes region of central Victoria (120kms north of Melbourne), one of the nation’s premium viticultural areas, the property comprises some 1,214 hectares of rich river flats with a frontage of 11 kms to the Goulburn River and 8 kms of permanent backwaters & creeks. The vineyard comprises 168 hectares of vines which include the rare Rhone whites of Marsanne, Viognier & Roussanne, along with classical varieties such as Shiraz, Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Chardonnay, Riesling, Semillon, Sauvignon Blanc & Verdelho.

I was worried that, given the price it might fall short of the standard set by the extraordinary portfolio at this historic estate. Well it doesn’t. The Victorian tones suit this grape so well and the floral, red fruit and herb notes are sensational."
Winemaking
Tahbilk Shiraz and Cabernet Sauvignon are crafted with a commitment to traditional winemaking values.
Fermentation takes place in original open oak vats (over 155 years old), followed by maturation in similarly aged large French oak barrels prior to being bottled. Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.
In the face of changing winemaking styles and trends, this has remained the way over the years, delivering wines of true provenance and reflective of each vintage.
A dry growing season for the 2019 vintage, with the exception of a massive thunderstorm in January that dumped 86mm in just two hours, led to early ripening of all varietals and a quick harvest. Despite this challenge in processing the fruit, all reds were picked at optimum ripeness showing juicy, bright fruits and an underlying elegance.
Tasting Notes
This Estate release is defined by dark cherry and plum fruits that sit most satisfyingly alongside savoury, spice and black pepper notes. Earthy, chewy tannins will cut through the fat of a rare sirloin steak or lamb roast if enjoying your Tahbilk 2016 Shiraz now (and believe me it is enjoyable!), and equally provide the support for further cellaring should you be looking for added complexity.
