Made entirely from premium quality Clare Valley fruit selected from the vineyards at Watervale. The grapes were left on the vines way past our normal picking time until quite dehydrated and botrytised. They were hand picked in May and the juice enjoyed a long, cool, clean fermentation. Following the fermentation the wine remained on lees for a further 10 months.

Tasting Notes
Colour: The colour is lively pale green yellow.
Bouquet: Distinctive nose is full of the aromas of honey and citrus with butterscotch overtones.
Palate: The palate has terrific fruit generosity, yet remains soft and subtle. It is rich and sweet while the firm acid finish gives the wine structure and balance. The wine displays the classic ripe buttery flavours of Clare Valley Semillon.
