Vinification
The fruit was machine harvested and the juice cold settled, racked and inoculated with a variety of yeast cultures - some to accentuate aromatics, others to bring out a textural component. Ferments progressed at cool temperatures in stainless steel tanks and were largely untouched allowing the fruit to express itself naturally. The wine remained on yeast lees post fermentation to build an extra textural element.
Winemakers Comments
A classical Marlborough wine from anything but a normal growing season. The 2011/12 growing season will be long remembered for the many sleepless nights leading into harvest due to an unseasonably cold summer which led to light crops and delayed grape development. All that changed from late March with a spectacular spell of fine, crisp weather through to early May that allowed for terrific flavour development and concentration. This wine is intended to embrace the vibrant and fresh characters that Marlborough Sauvignon Blanc is renowned for.
