Kilikanoon has applied old world techniques of open fermentation and basket pressing to extract as much flavour and character from these two, forty year old Cabernet vineyards. Low yields and 24 months maturation in new and older small French oak casks. The nose is intensely redolent of blackcurrants, dark chocolate and garden herbs. Ripe dark flavours of plums and black cherries saturate the seamless palate, further complexed by the spice and char from maturation in fine French oak.
An ageing potential of at least 12 - 15 years with careful cellaring.
